ABOUT HUGO SHUTTLEWORTH / BERWYN
Hugo has been catering in the Cotswolds for nearly twenty years, originally from kitchens in London and later in Burford as Berwyn Catering. He has cooked for everyone from the Spice Girls to the Clintons and everywhere from muddy fields in Gloucestershire to yachts in Thailand via the occasional royal palace.
In 2015 Hugo moved from Cirencester to a small farm on the Devon Dorset border where he grows as much produce for Berwyn as possible and rears rare breed pigs and Dorset Poll sheep. He loves to cook with wild and truly local, seasonal ingredients – from the farm where possible. Making air-dried ham and salami is a serious passion and 2019 will see Bottle Farm Charcuterie in the shops.
This lunch is a celebration of the autumn at Bottle Farm using many of its organic ingredients, prepared, cured, fermented and cooked simply but with imagination - a modern interpretation of the traditional field to fork ethos.
